Sunday, June 13th, 2021: Keto Day #5

Today for breakfast we had a nutritious egg scramble! Packed with spinach, kale and pork (from the night before).


Ingredients:


4 eggs

1 Avocado

2 cups Kale

2 cups Spinach

2 tbsp. Olive Oil

1 cup chopped up pork

2 slices of Tillamook Extra Sharp White Cheddar Cheese

Oregano (to taste)




Directions:


  1. Heat 2 tbsps. of olive oil in a pan and add the spinach and kale. Add the chopped up pork and the avocado. Mix these ingredients until the spinach and kale are cooked down and the pork is warm. (We had a pork tenderloin roast for dinner yesterday, so the pork is leftovers)

  2. Next, add the 4 eggs to the pan (I usually just crack the eggs directly into the pan and then mix them with the rest of the ingredients).

  3. Add the 2 slices of cheese. Break the slices into smaller pieces before putting them on top. Then, mix the cheese in.

  4. Add the oregano to taste.

  5. Enjoy!

Pro Tip: Fresh oregano contains 8 times the amount of antioxidants then spinach, so add the fresh herbs!!
