Keto Bread Mix

I was sooo devastated that changing my diet to the keto diet would not let me consume bread any longer... but there is hope!! I found a 0-net carb bread mix and we tried it yesterday using the "artisan" bread method. Basically, I have to use honey to proof the active yeast and the yeast "eats" the honey which is why it's labeled as 0-net carbs (apparently they have done studies to show that it actually is 0-net carbs, so I will believe them for now).


I have been making homemade no-kneed bread starting this past January and it is sooooo good! It's super easy to make with less then 5 minutes of actual work (but the bread does have to rise for about 20 hours). So, if you are a good planner, it is amazing! But now we have to give up the amazing bread for the keto bread. The keto bread is actually not that bad (it's just not my bread!).

I went through the directions on the package and the ones I found online to make the artisan bread (which I can use my dutch oven to bake with). So that was super exciting. But I think the next time I make the bread, I need to let it rise for a longer period of time. The bread did come out a bit dense (which actually happened with the flour bread I was making before this and then I realized that it just needed more rising time.



And for breakfast this morning I also had avocado toast! Let's forget the part right after I took the photo that the top slice of bread took a nose dive onto the porch (avocado side down--- thanks Murphy's Law!).
